Broccoli Salad Recipe
Did you know that broccoli is a wonderful vegetable that has fortifying and anti-carcinogenic properties that can help fight cancer, diabetes, osteoporosis and heart disease? Broccoli is not only rich in vitamins and soluble fiber but also low in calories. The most common problem that many people have with broccoli salads is eating raw broccoli.
If you have trouble eating raw broccoli, you can always cook the broccoli first. To do this, get a skillet or pot and fill it with some water. Add a teaspoon of salt and bring to a boil. If you want bright green and crunchy broccoli, cook it for 1 minute. If you prefer your broccoli to be more cooked, cook it for another 1 minute. Never cook your broccoli for more than 2 minutes as it will make it mushy and bad for making broccoli salad.
Ingredients:
- 2 large bunches broccoli
- 1/2 lb cooked bacon, crumbled
- 1/2 cup minced red onion
- 1/2 cup raisins
- 1/2 cup sunflower seeds
- 1 tablespoon red wine vinegar
- 1 cup mayonnaise
- 1/4 cup sugar
Instructions:
1. First of all, you need to chop the broccoli correctly by trimming off the large leaves from the broccoli stem. After that, remove the tough stalk at the end and wash the broccoli head thoroughly. Then, cut the head into flowerets and the stem into bite-size pieces.
2. In a large bowl, transfer the chopped broccoli into it and add in the raisins and onions.
3. To make the dressing, in another bowl, add in the red wine vinegar, sugar and mayonnaise. Combine and mix well.
4. Toss the broccoli salad with the dressing. Add in the cooked bacon and top it with sunflower seeds. Serve and enjoy!
