Garlic Broccoli Salad Recipe
Ingredients:
- 1 head fresh broccoli
- 1 1/2 teaspoons salt
- 3 to 4 cloves garlic
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon dijon mustard
- 1/2 cup parmesan cheese, shredded
Instructions:
1. Chop the broccoli by cutting the florets and stems into bite size pieces then soak them in salted water and drain them well.
2. On a cutting block, use a fork and mash the garlic. Transfer the garlic into a small bowl and season it with salt then add in the olive oil, vinegar and dijon mustard to make the dressing. Combine and mix well.
3. In a large bowl, transfer the chopped broccoli into it and toss them well with the garlic dressing you have just made.
4. Sprinkle the top with shredded parmesan cheese and let it marinate for at least 3 hours before serving.
